There are two varieties of açaí tree? The Euterpe oleracea and Euterpe precatoria. Each one grows in a different region of the Amazon and they have different harvest periods. The oleracea, native to the lowlands of the Amazon delta is the most consumed one. Ninety-five percent of all consumed açaí in Brazil and the world comes from this region. The Jussara palm, native to the Brazilian Atlantic forest, could also be used, but its exploration is not allowed by the Brazilian Environmental Agency.

And last but not least, if you want to be considered an açaí expert, NEVER ask the açaí processor to buy acai pulp. You can either tell him you want to buy acai or acai puree. The acai pulp only exists inside the depulping machine, but the depulped product is called açaí puree. Or simply say: Açaí!
